Abstract

Dental caries (tooth decay) are a major public health problem that plagues all countries in the world. Milk and dairy products have been identified as having anticariogenic activity. Due to their high buffering capacity, provided by inorganic salts and proteins, milk products reduce the influence of acids produced by cariogenic bacteria. Their high content of calcium and phosphate may aid in remineralization of the tooth enamel. In addition, milk proteins have specific properties that may be anticariogenic.
